Ashley's Crab Puffs
Ashley'S Crab Puffs is an moderately easy dinner. Made with 3/4 c. mayonnaise, 1 c. cooked crab (shrimp), 1 tbsp. chopped scallions, 1/8 tsp. cayenne pepper and 2 1/2 tbsp. lemon juice, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Preheat broiler.
Combine mayonnaise, shrimp, scallions, pepper, lemon and salt to taste.
Beat the egg whites until stiff. Gently fold in shrimp or crab mixture.
Spoon a mound on each bread round.
Place on a cookie sheet.
Put under broiler until lightly brown.
Serve immediately.
Makes 48 puffs.
