Artichoke Quiche
Artichoke Quiche is an moderately easy dinner. Made with 2 (6 oz.) jars marinated artichoke hearts, 1/2 lb. sharp cheddar cheese, grated, 1 small onion, chopped finely, 4 eggs and 2 tbsp. parsley, chopped, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Drain artichokes, reserving oil.
Saute onion and garlic in artichoke oil until clear.
Beat eggs; add bread crumbs, seasonings, cheese and chopped onion.
Mix well.
Spray quiche pan or 9 x 13-inch pan with oil.
Spread evenly.
Bake for 30 minutes at 350Β°.
Cut into 1-inch squares if using 9 x 13-inch pan. Can reheat to serve.
