Artichoke Nibbles
Artichoke Nibbles is an moderately easy dinner. Made with 2 (6 oz.) jars marinated artichoke hearts, 1 small onion, finely diced, 4 eggs, 1/4 c. fine bread crumbs and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Drain marinade from 1 jar of artichoke hearts into a frying pan.
Add onion and saute until softened.
Drain liquid from other jar of artichoke hearts and discard.
Chop artichokes into small pieces.
In a bowl, beat eggs with fork.
Add crumbs, salt, pepper, oregano and Tabasco sauce.
Stir in cheese, parsley, artichokes and onion.
