Artichoke Nibbles
Artichoke Nibbles is an moderately easy dinner. Made with 2 jars marinated artichoke hearts, 1/4 c. bread crumbs, 2 tbsp. parsley, salt, pepper and oregano to taste and 1 small onion, chopped, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Drain liquid from one jar of artichokes into pan.
Chop artichokes and set aside.
Add onion to liquid in pan and saute. (Add a little garlic salt.)
Beat eggs; add bread crumbs and seasonings.
Stir in cheese, parsley, artichokes and onion.
Put in greased 9 x 9-inch pan.
Bake at 325Β° for 30 minutes.
Cut into 1-inch squares and serve hot or cold.
