Armadillo Eggs
Armadillo Eggs is an easy dinner. Made with fresh jalapeño peppers, 1 c. shredded cheddar cheese, 1 c. shredded mozzarella cheese, 1 lb. bulk sausage and 1 pkg. shake 'n bake for pork, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Wash and core the peppers.
Mix the cheeses together and stuff the peppers.
Wrap enough sausage around the pepper to cover it. Roll the pepper in the Shake 'n Bake.
Bake at 425° until the sausage is done.
Will make approximately 12 peppers.
