Apricot Salad
Apricot Salad is an moderately easy dinner. Made with 2 pkg. apricot jello, 2 c. hot water, 2 c. cold water, 3 bananas, sliced and 1 c. miniature marshmallows, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

In a small saucepan, mix 1 egg (slightly beaten), sugar and 1/2 cup pineapple juice.
Cook until thickens.
Add 1/2 cup soft cream cheese.
Set aside to cool.
In a separate bowl, mix apricot jello with water.
Add pineapple, bananas and marshmallows.
Add mixture in saucepan to gelatin.
Let congeal.
Add Cool Whip to top.
