Apricot Salad
Apricot Salad is an moderately easy dinner. Made with 1 lb. can apricot halves, 1/2 c. orange juice, 1/2 c. mayonnaise, 1 small carton creamed cottage cheese and 2 tbsp. lemon juice, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Drain juice from apricots and add water to make 1 cup liquid and heat to a boil.
Add gelatin and stir until dissolved.
Stir in lemon and orange juice and dash of salt.
Blend in cottage cheese until smooth.
Chill until partially congealed.
Cut drained apricots into slices.
Beat gelatin mixture until fluffy and fold in fruit and mayonnaise.
Pour into 8-inch square dish and chill.
