Apricot Melon Cooler
Apricot Melon Cooler is an easy dinner. Made with melon, cantaloupe or honeydew, 2 tbsp. lemon juice, 4 ice cubes, 1 pt. lemon sherbet and dash of salt, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Remove seeds and rind from melon.
Cut into pieces, enough to make one cup.
Set aside.
Pour the nectar, lemon juice and dash of salt into electric blender container.
Cover and turn on motor, gradually adding melon pieces.
Add in order the ice cubes and the lemon sherbet.
Blend until thoroughly mixed.
Serve immediately.
