Apricot Gelatin Salad
Apricot Gelatin Salad is an moderately easy dinner. Made with 1 (16 oz.) crushed pineapple, 1/2 c. sugar, 1 c. chopped celery, 2 (3 oz.) pkg. cream cheese and 2 (3 oz.) pkg. apricot jello, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Combine pineapple juice, water and sugar in saucepan.
Bring to boil.
Stir in jello and let cool for a few minutes.
Add cream cheese, celery, nuts and blend.
Fold in Cool Whip after jello has slightly thickened.
Refrigerate several hours to set.
