Apricot Bars
Apricot Bars is an moderately easy dinner. Made with 3/4 c. oleo, 1 c. sugar, 1 egg, 1 1/2 tsp. vanilla and 1/2 tsp. salt (optional), this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cream butter, sugar, egg; add dry ingredients in usual manner pastry blender as you do pie crust. (I cut the sugar into the oleo with a fork and knife, then add the other ingredients, except preserves; it's best if you don't get the mixture creamy, just crumbly.) Reserve 3/4 cup for topping.
Grease x 13-inch pan. Spread or pat mix into pan.
Spread with apricot preserves. Crumble spread 3/4 cup reserved mix on top.
Bake for 30 minutes at 350Β° (do not overbake).
