Apricot Bars
Apricot Bars is an moderately easy dinner. Made with 3/4 c. butter or oleo, 1 c. sugar, 1 egg, 2 c. flour and 1/4 tsp. baking powder, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

In large bowl cream butter and sugar.
In separate bowl combine flour and baking powder.
Gradually add to butter mixture.
Add coconut, nuts and vanilla.
Mix thoroughly.
Press 2/3 of dough into greased 13 x 9 x 2 inch pan.
Spread with preserves; crumble remaining dough over preserves.
Bake at 350Β° for 30-35 minutes or until golden brown.
Cool in pan on wire rack.
Cut into squares.
Yield: 36 bars.
