Apple Quiche
Apple Quiche is an moderately easy dinner. Made with 1 prebaked (9-inch) shell, 1 tbsp. butter, 3 large cooking apples, peeled, cored and coarsely chopped, 1 tsp. vanilla and 1/4 to 1/2 c. sugar, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Melt butter in pot.
Add apples and vanilla and cover.
Cook until soft, but not mushy on moderate heat, shaking pan occasionally.
Remove from heat and stir in sugar, adding more if needed.
Place apple filling in the pie shell.
Blend the beaten eggs with the cream and pour over the apples.
Bake at 375Β° for about 25 minutes or until custard is just set.
Serve warm or at room temperature.
