Apple Fritters
Apple Fritters is an moderately easy dinner. Made with 1 egg, slightly beaten, 1 c. milk, 1/4 c. melted butter or margarine, 1/3 c. firmly packed light brown sugar and grated rind of 1 lemon, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Combine egg, milk, melted butter, and brown sugar in mixing bowl.
Mix together using a fork.
Stir in the lemon rind, lemon juice, apples, and vanilla extract.
Sift together the flour, baking powder and salt.
Stir the flour mixture into the batter, using a fork or spoon, being careful not to overmix.
Preheat oil (about an inch deep) in skillet to 350 degrees. Drop batter off the end of a tablespoon into hot oil.
Fry to a golden brown. Turn so they will brown evenly.
Remove from oil using a slotted spoon or tongs and place on paper towels.
Allow to cool.
Makes 25 to 30 fritters.
