5 Pound Fruit Cake
5 Pound Fruit Cake is an moderately easy dinner. Made with 1 c. butter, 1 1/2 c. sugar, 7 eggs, 2 1/2 c. flour and 1 tsp. vanilla flavor, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Chop candied fruit in small pieces; add to pecans.
Set aside. Mix the first 7 items in a large mixing bowl.
Mix by hand only and only until all items are wet.
It's okay to have lumps.
If you mix too much, you'll need a steak knife to cut the cake.
Take the fruit and pecans and add the flour; coat the fruit well, then fold into cake mixture.
Put mixture in 2 loaf pans and bake at 250Β° for 3 hours.
Place a pan of water under the cakes while baking.
