Zucchini Stuffing
Zucchini Stuffing is an moderately easy dinner. Made with 6 c. finely chopped zucchini, 1 onion, chopped, 1 can cream of mushroom or cream of celery soup, 1 c. sour cream and 1 c. grated carrot, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Saute zucchini and onion until tender.
Combine with all ingredients in large bowl except margarine and 1/2 cup stuffing. Mix thoroughly.
Spray 13 x 9 x 2-inch pan with Pam.
Pour mixture into pan.
Combine margarine and 1/2 cup stuffing mix and sprinkle on top.
Bake at 350Β° for 30 minutes, uncovered.
