Zucchini Special
Zucchini Special is an moderately easy dinner. Made with 2 1/2 lb. (8 c.) zucchini, sliced 3/8-inch thick, 1/2 c. chopped onion, 1/2 c. chopped green pepper, 1/4 c. oleo and 1 (3 oz.) can mushrooms, drained, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
In large saucepan, cook zucchini covered in boiling water until crisp-tender, about 4 to 5 minutes.
Drain well; set aside. In same saucepan, cook onion and green pepper in oleo just until tender.
Remove from burner and add drained mushrooms, dry spaghetti sauce mix, water and tomato paste.
Mix well.
Gently stir in zucchini and Mozzarella cheese.
Place in 9 x 13-inch pan. Top with grated cheese.
Bake at 350Β° for 35 minutes.
