Zucchini Rounds
Zucchini Rounds is an moderately easy dinner. Made with 1/3 c. biscuit mix, 1/4 c. parmesan cheese, 1/8 tsp. pepper, 2 eggs, beaten and 2 c. coarse, unpeeled shredded zucchini, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In a mixing bowl mix biscuit mix, cheese, pepper and eggs. Stir until moist.
Fold in zucchini and mix well.
Use 2 tablespoons mixture for each round.
Cook in hot to medium margarine 2 to 3 minutes on each side until brown.
