Zucchini Rounds
Zucchini Rounds is an moderately easy dinner. Made with 1/3 c. biscuit mix, 1/4 c. grated parmesan cheese, 1/8 tsp. pepper, 2 slightly beaten eggs and 2 c. shredded unpared zucchini (2 medium zucchini), this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
In mixing bowl, stir together biscuit mix, cheese and pepper. Stir in beaten eggs just until moistened.
Fold in zucchini.
Melt margarine in 10-inch skillet over medium heat.
Use 2 tablespoons mixture for each round and cook 2 to 3 minutes on each side, or until brown.
