Zucchini Rounds
Zucchini Rounds is an moderately easy dinner. Made with 1/3 c. biscuit mix, 1 c. grated parmesan cheese, 1/8 tsp. pepper, 2 slightly beaten eggs and 2 c. shredded unpared zucchini, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

In a bowl mix biscuit mix, cheese and pepper.
Stir in eggs just until mixture is moistened.
Fold in zucchini.
In skillet, melt butter over medium heat.
Using 2 tablespoons mixture for each round, cook 2 to 3 minutes on each side or until brown.
