Zucchini Preserves is an easy dinner. Made with 1 large tender zucchini (6 c.), 6 c. sugar, 6 oz. crushed pineapple (do not drain) and 1 (6 oz.) apricot or peach jello, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Peel and seed 1 large, tender zucchini.
Cut on cole slaw cutter and measure 6 cups.
Stir all together, except jello.
Boil for 6 minutes.
Add jello.
Stir well and pour into jars.
