Preheat oven
Grate zucchini; set aside.
In large bowl of electric mixer, beat eggs until thick. Gradually beat in sugar a separate bowl, sift 3 1/4 cups flour, baking powder, and cinnamon.
On low speed, add dry ingredients to egg mixture alternately with zucchini and wheat germ.
