Zucchini Nut Bread
Zucchini Nut Bread is an moderately easy dinner. Made with 1 c. sugar, divided, 2 tsp. cinnamon, 2 eggs, 1/2 c. vegetable oil and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Grease two 12-cup muffin pans.
Sprinkle mixture of 2 teaspoons of sugar and cinnamon over greased surface.
Shake to spread evenly, discarding excess.
Beat together eggs, remaining sugar, oil, vanilla and zucchini.
Stir in remaining ingredients and mix well.
Pour into prepared pans.
Cook for 20 to 25 minutes at 350Β°.
Let stand 10 minutes before serving.
Serve warm or cold.
