Zucchini Marmalade
Zucchini Marmalade is an easy dinner. Made with 6 c. shredded zucchini (if peeled, it will be clear), 6 c. sugar, 1 large can pineapple, crushed (not drained), 1/4 c. lemon juice and 1 (6 oz.) pkg. apricot jello, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Bring sugar and zucchini to a rolling boil (10 minutes). Stirring constantly, add pineapple and boil 6 minutes more. Remove from heat; add jello and stir until dissolved.
Put in jars and seal.
