Zucchini Marmalade
Zucchini Marmalade is an easy dinner. Made with 6 c. peeled and ground zucchini, 6 c. sugar, 2 tbsp. lemon juice, 1 (20 oz.) can crushed pineapple, well drained and 2 pkg. (3 oz. size) apricot jell-o, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Add 1 cup water to zucchini and boil for 6 minutes.
Add sugar, lemon juice and pineapple.
Boil for 6 more minutes.
Add Jell-O; cook 6 more minutes.
Pour into freezer containers.
Cool and freeze.
Yields 12 (1/2 pints).
