Zucchini Jam
Zucchini Jam is an easy dinner. Made with 5 c sugar, 5 c ground zucchini, 1/4 c lemon juice and 1 large box of jello (any flavor desired), this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Mix sugar and zucchini in blender, add lemon juice.
Bring to boil and boil hard for full 20 minutes.
Add jello and stir well. Put in hot jars (pints) and seal.
Makes about 3 pints.
Use a large kettle to cook in.
