Zucchini Chicken
Zucchini Chicken is an moderately easy dinner. Made with 1 frying chicken, cut in pieces, 1 c. sliced onions, 1 c. sliced carrots, 1 c. sliced celery and 1 lemon, sliced, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Place all ingredients except chicken and zucchini in shallow roasting pan and put the chicken on top; brush with melted butter. Bake at 375Β° for 30 minutes.
Add zucchini, thinly sliced.
Bake 30 minutes longer or until tender.
Remove chicken, zucchini and lemon.
Mix 2 tablespoons of cornstarch and 1/2 cup cool chicken bouillon or water until smooth.
Pour into pan, stirring constantly and bring to a boil over medium heat.
Boil 1 minute.
Serve around chicken pieces on large platter.
