Zucchini Caviar
Zucchini Caviar is an moderately easy dinner. Made with 4 c. zucchini, sliced (raw), 1 medium onion (raw), 1 medium garlic clove, crushed, 1/4 tsp. dill weed and 1/4 tsp. thyme leaves, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Shred zucchini and finely chop onion; saute with garlic, dill weed, thyme and oil until zucchini is tender.
Remove from heat. Finely chop tomatoes and add with lemon peel and Worcestershire sauce.
Combine with other ingredients.
Refrigerate until chilled.
Stir in lemon juice just before serving.
Serve with crackers.
