Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 4 medium zucchini, sliced 1/2-inch thick, 3/4 c. shredded carrots, 1/2 c. chopped onion, 6 tbsp. margarine and 2 1/2 c. herbed stuffing cubes, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cook squash in a little boiling water until tender; drain. Remove from heat.
Stir in 1 1/2 cups stuffing cubes, soup, sour cream and 1/2 of butter.
Gently stir in carrots and onion.
Turn into 1 1/2-quart greased casserole.
Melt remaining butter; add rest of the stuffing and gently toss and top casserole.
Bake at 350Β° for 30 to 40 minutes.
