Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 6 c. diced zucchini, 1/4 c. onion, diced, 1 (10 3/4 oz.) can cream of chicken soup, 8 oz. sour cream and 8 oz. pkg. pepperidge farm stuffing, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Cook squash and onion 5 minutes in preheated water; drain well. Combine soup and sour cream.
Fold into drained squash and onion. Melt oleo and combine with stuffing mix.
Spread 1/2 of stuffing in bottom of greased casserole dish.
Spoon in squash and onion, then top with rest of stuffing.
Bake at 350Β° for 25 to 30 minutes. Serves 6.
