Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 6 c. sliced zucchini, 1 can cream of chicken soup, 1 c. sour cream or plain yogurt, 1/4 c. chopped onion and 1 c. shredded carrots, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Cook zucchini 5 minutes in boiling water; drain.
Combine chicken soup, sour cream, onion and carrots.
Fold in cooked zucchini.
Combine and mix together the margarine and croutons. Spread half of crouton mix into a 12 x 7 x 2-inch baking dish. Spoon on zucchini mixture.
Top with the rest of crouton mix. Bake at 350Β° for 25 to 30 minutes.
Can also add leftover chicken.
