Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 3 medium zucchini, don't peel, 1 large onion, chopped, 1 stick margarine, 1 can cream of chicken soup and 1 c. sour cream, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Bring 1 quart of water to boil.
Add sliced zucchini and boil 5 minutes with the onion after it has returned to boiling.
Drain well in colander.
In separate pan, melt butter and add soup and sour cream.
Stir in both packages of stuffing mix.
Toss in zucchini.
Mix gently.
Place in greased casserole and cover. Bake at 350Β° for 30 minutes.
Uncover and top with grated cheese. Bake 10 minutes longer.
