Zucchini Cake
Zucchini Cake is an moderately easy dinner. Made with 3 c. grated zucchini, 3 c. sugar, 1 1/4 c. oil, 4 eggs and 3 c. flour, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cream together zucchini, sugar, oil and eggs.
Combine dry ingredients and gradually add to creamed mixture.
Pour into well-greased and sugared Bundt cake pan.
Bake at 350Β° for 1 to 1 1/3 hours.
Immediately after removing from oven, run knife around edge of pan and center to loosen cake.
Let cool completely before removing from pan.
Pour Vanilla Glaze over and let set.
