Zucchini Cake
Zucchini Cake is an moderately easy dinner. Made with 3 eggs, 1 1/2 c. sugar, 2/3 c. oil, 2 to 4 c. zucchini, grated and 3 tsp. vanilla, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Beat eggs; add oil, sugar, zucchini and vanilla.
Mix lightly, then beat well.
Add dry ingredients.
Mix well.
Add nuts.
Pour into 9 x 13-inch baking pan (greased) or two (9 x 5-inch) loaf pans.
Bake at 350Β° for 45 to 60 minutes.
