Zucchini Bread Plus
Zucchini Bread Plus is an impressive dinner. Made with 3 c. flour, 2 c. sugar, 1/2 tsp. baking powder, 1 tsp. each: baking soda, cinnamon and salt and 1/2 tsp. nutmeg, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Mix flour, sugar, baking powder, baking soda, cinnamon, salt and nutmeg in large bowl.
Beat eggs in mixer bowl until thick and lemon colored.
Add oil; mix well.
Add dry ingredients; mix just until moistened.
Stir in zucchini, apricots, apple, pineapple, raisins, coconut and nuts.
Spoon into 2 greased 5 x 9-inch loaf pans.
Bake at 350Β° for 1 hour or until toothpick comes out clean. Remove to wire rack to cool.
Can be baked in Bundt pan.
