Zucchini Bread
Zucchini Bread is an moderately easy dinner. Made with 3 eggs, well beaten, 2 c. sugar, 3 tsp. vanilla, 1 c. oil and 2 c. shredded (unpeeled) zucchini, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Beat eggs until light and fluffy.
Add sugar, vanilla and oil. Blend well.
Stir in zucchini.
Sift together flour, baking powder, salt, soda and cinnamon.
Blend with egg mixture.
Fold in nuts and coconut.
Turn into two greased and floured 9 x 5-inch loaf pans.
Bake at 350Β° for 1 hour.
Makes 2 loaves.
