Zucchini Bread
Zucchini Bread is an moderately easy dinner. Made with 3 eggs, 2 c. sugar, 3/4 c. vegetable oil, 1 tbsp. vanilla and 2 c. loosely packed, coarsely grated zucchini, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

In a bowl, beat the 3 eggs until frothy.
Add the sugar, oil and vanilla; beat until the mixture is thick and lemon colored. Stir in the zucchini, flour, cinnamon, soda, salt and baking powder.
Add nuts if desired.
Pour this mixture into 2 greased and floured loaf pans and bake in a 350Β° oven for 1 hour.
Cool 10 minutes.
