Zucchini Bread
Zucchini Bread is an moderately easy dinner. Made with 4 eggs, 2 c. granulated sugar, 1 c. vegetable oil, 3 1/2 c. unsifted flour and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
In mixing bowl beat eggs and gradually add sugar until well mixed.
Add the vegetable oil and beat.
Mix together the flour, baking soda, cinnamon and baking powder.
Add to the egg, sugar and oil mixture together with zucchini in small amounts. Alternate first dry and then zucchini.
Add walnuts, raisins and vanilla.
Grease and flour two loaf pans.
Bake at 350Β° for 55 minutes or until done.
Freezes well for future use.
