Zucchini Bread
Zucchini Bread is an moderately easy dinner. Made with 1 c. vegetable oil, 2 c. sugar, 2 c. grated zucchini, 3 tsp. vanilla and 3 c. flour, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Beat together the eggs, oil and sugar.
Mix in the rest of the ingredients in order.
Better if you sift the dry ingredients together before adding.
Fold in the zucchini and walnuts last. Grease and flour 2 loaf pans.
Pour in mixed bread.
Bake at 325Β° for 1 hour or until a toothpick inserted comes out clean.
Cool in pans for about 5 minutes, then turn out and finish cooling.
Wrap in foil to store.
Freezes well.
