Zucchini Bread
Zucchini Bread is an moderately easy dinner. Made with 3 eggs, 1 3/4 c. sugar, 1 c. vegetable oil, 3 tsp. vanilla and 2 c. grated zucchini, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Beat eggs until light and fluffy.
Add sugar to eggs.
Add vegetable oil, vanilla and zucchini.
Sift together the next 5 ingredients and add, a little at a time.
Add a few raisins. After stirring, add nuts.
Bake in two 9 x 5-inch loaf pans or 4 small loaf pans, greased, for 1 hour at 350Β°.
When cool, slice and serve with cream cheese.
