Chop walnuts into medium-sized pieces.
Beat eggs; beat in sugar.
Then add oil and vanilla.
Combine dry ingredients and add to the first mixture, alternating with zucchini.

Divide mixture into 2 greased and floured 9 x 5 x 2-inch pans.
Bake at 350Β° for about 55 minutes or until done. The loaves freeze well.
