Zucchini Bread
Zucchini Bread is an moderately easy dinner. Made with 3 eggs, 3 c. sugar, 1 c. vegetable oil, 2 c. peeled and grated zucchini and 2 tsp. vanilla, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Beat eggs well; add sugar and beat until light yellow.
Add oil, zucchini and vanilla; mix thoroughly.
Sift together the flour, baking soda, salt, baking powder and cinnamon.
Add to zucchini mixture and mix thoroughly.
Bake in 2 greased and floured 9 x 5-inch bread pans.
Bake at 350Β° for 1 hour.
