Zucchini Appetizer
Zucchini Appetizer is an moderately easy dinner. Made with 7 c. thinly sliced zucchini (unpeeled), 1/2 c. chopped onion, 1/2 c. parmesan cheese, 1/2 c. oil or slightly less and 4 eggs, beaten slightly, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Mix all the ingredients together.
Add Bisquick last.
Spread in greased 13 x 9-inch oblong Pyrex pan and bake until golden brown on top at 350Β° for 50 to 60 minutes.
Cut into finger-size squares, about 40.
Can also be used as a main coarse with salad or as a vegetable dish.
Can be made ahead, refrigerated, then baked before serving.
Stays well on a warming tray.
