Zesty Squash

Zesty Squash is an easy dinner. Made with 8 to 10 squash (yellow or zucchini or mixed), sliced or cubed, 1 lb. mild cheddar cheese, grated, 1 can ro-tel tomatoes, bread crumbs (italian) and butter or margarine, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

👨‍🍳 Instructions

Mix cut squash, Ro-Tel tomatoes (do not drain) and 1 1/2 to 2 cups water in a large pot. Stew on medium heat for about 20 minutes or until squash is tender.

Preheat oven to 350°.

In a baking dish, spoon in layer of squash mixture, dob with butter, sprinkle with handful of bread crumbs and layer of cheese. Continue layering until all mixture is used. Bake at 350° for 20 to 25 minutes.
