Yellow Squash Puffs is an moderately easy dinner. Made with 3/4 lb. yellow squash (1 c. mashed), 1 egg, beaten, 1/3 c. flour, 1/3 c. meal and 1 tsp. baking powder, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Cook squash 10 to 15 minutes. Drain and mash 1 cup.
Combine 1 cup mashed squash and egg.
Stir well. Combine flour, meal, baking powder and salt.
Stir. Add squash mixture and onion. Stir until blended.
Drop squash mixture by level tablespoon into hot oil. Cook until golden brown, turning once. Drain on paper towel. Yields 2 dozen.
