Yellow Squash Casserole
Yellow Squash Casserole is an moderately easy dinner. Made with 2 lb. yellow squash, sliced, 1 c. water, 2 small onions, minced, 2 tbsp. butter, melted and 1 c. ritz cracker crumbs, divided, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Combine squash and water in a medium saucepan; bring to a boil. Cover, reduce heat and simmer 10 minutes or until tender.
Drain well and mash; set aside.
Saute onions in butter until tender. Combine onions, squash, 3/4 cup cracker crumbs, cheese and remaining ingredients.
Spoon into a lightly greased 2-quart casserole.
Sprinkle with remaining cracker crumbs.
Bake at 350Β° for 45 minutes.
