Yellow Rice
Yellow Rice is an moderately easy dinner. Made with chicken pieces (thigh, legs, breasts, wings), olive oil, wesson oil, 2 lb. bag rice, washed and add 1 qt. hot water and 1 small bottle yellow food coloring, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Brown the chicken pieces in combination of olive oil (3/4 of small bottle) and Wesson oil (approximately 1 cup).
In large turkey roaster pan, place the rice, food coloring, salt, dried onion flakes, garlic powder and tomato juice or tomatoes (rinse can or jar and add to mix).
Place chicken on top of rice mixture and pour leftover oils over all.
Press with a spoon to allow oils to penetrate.
