Yankee Muffins
Yankee Muffins is an impressive dinner. Made with 2 c. shredded, unpeeled apples, 1 1/3 c. brown sugar, 1 c. chopped cranberries, 1 c. shredded carrots and 1 c. chopped pecans, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
In a large mixing bowl, combine apples and sugar.
Gently fold in cranberries, carrots and nuts.
Combine dry ingredients and add to mixing bowl.
Mix well to moisten.
Combine eggs and oil.
Stir into apple mixture.
Fill 18 greased muffin pans 2/3 full.
Bake 20 to 25 minutes at 375Β°.
Cool 5 minutes before removing from pans.
