Yams-n-Pecans
Yams-N-Pecans is an moderately easy dinner. Made with 2 cans drained yams (large cans), 1 tsp. cinnamon, 1/4 c. sugar, 2 egg yolks and 1 c. pineapple juice, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Beat egg whites until forms stiff peak.
In mixer, beat yams until fluffy.
Add remaining ingredients.
Fold in stiffly beaten egg whites.
Spray casserole dish with Pam.
Pour yam mixture into casserole and sprinkle with chopped pecans.
Bake uncovered 25 to 30 minutes at 350Β°.
