Wild Duck
Wild Duck is an moderately easy dinner. Made with 1/4 medium apple, 1/4 small onion, 1 small link pork sausage (not smoked), 1/2 c. burgundy wine and 1 small piece salt pork, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Salt and pepper duck.
Stuff with apple, onion, sausage (with casing removed) and celery leaves.
Add a little wine to the cavity.
Place in an iron pot.
Pour over rest of wine.
Place salt pork on breast of duck.
Cover.
Roast at 325Β° for about 3 hours. Serve with orange sauce.
