White Chili
White Chili is an moderately easy dinner. Made with 1 lb. dried navy beans, 2 boneless skinless chicken breasts, 1 (4 oz.) can green chiles, chopped, 1 (10 3/4 oz.) can cream of chicken soup and 8 oz. sour cream, this recipe delivers authentic, satisfying flavors. Soak beans overnight.
Drain beans and put beans and chicken in a 4 to 6-quart stockpot.
Cover with water and bring to a boil. Reduce heat and let simmer, removing chicken to cool when it is done.
When beans are near done, combine chiles, soup, sour cream and 1 cup of the bean juice in a mixing bowl.
Stir until well blended.
Add green chile mixture to beans and mix well.
